We always hear, “The fresher the fish, the better it tastes,” and most of the time, that’s true. However, these recipes prove that sometimes, fish can taste just as yummy when it comes from a can that’s been in your pantry for a few months. Of course, canned salmon doesn’t look as lovely or as elegant as a fresh, whole fish, but it’s just as tasty. It also requires a lot less work when making things like salmon patties, spring rolls, and pasta. When it comes to canned salmon, I’m hooked. (Sorry! Bad, fishy pun, I know. But I’m really kraken myself up over here. Okay. That was my last one. I’m done now.) Seriously, though, if you have a few cans of salmon sitting around on your shelves at home and don’t know what to do with them, I think you’ll appreciate this list.
1. Salmon Patties
With this recipe, you can make half a dozen salmon patties in 30 minutes or less. They are slightly crispy on the outside but have tender, creamy insides. The intense flavor comes from the addition of cayenne pepper, garlic and onion powders, white vinegar, and Dijon mustard. The breadcrumbs add texture and help them stick together better, and the Greek yogurt gives them their inner creaminess. It’s a great recipe.
2. Salmon Salad
Whether you eat it by itself, on crackers, or between two pieces of bread, this silky but chunky salmon salad is sure to be a hit. The crispy carrots, earthy bell peppers, smooth avocados, salty capers, fresh parsley, salt, and pepper add a ton of flavor to the relatively mild salmon. The mayo and Greek yogurt give the whole mixture a smooth creaminess that brings everything together. Best of all, there’s no cooking involved, and you can have it ready in 10 minutes. Be sure to let it sit in the fridge for a couple of hours before serving it, though.
3. Salmon Pasta
This recipe is another one that takes only 10 minutes to make, but with it, you’ll have to cook your pasta and saute your onions and chilies first. Luckily, that’s the most challenging part! After the pasta and the veggies are ready, you’ll add cheese and lemon to the veggies, as well as a bit of the pasta water to make the mixture saucy. Then follow the recipe’s instructions to add the salmon and rocket leaves to the sauce. Mix the pasta and the sauce, and you’ll have a delicious, savory, but slightly zesty meal.
4. Salmon Cracker Spread
If you’re looking for a way to add more seafood to your appetizer platter, this salmon cracker spread is the way to do it. It’s relatively simple to make, taking only 20 minutes from start to finish if you’re using fresh salmon. Since this recipe calls for canned salmon, it takes less than 10 minutes! Simply mix all your ingredients and let the mixture chill in the fridge until you’re ready to serve it. The recipe recommends eating it with Ritz crackers, but it tastes pretty good on pita bread, as well. This is one of my go-to appetizer recipes, primarily because I usually have all the ingredients I need, except for maybe the fresh dill, sitting around my kitchen anyway.
5. Salmon Spring Rolls
Usually, when it comes to spring rolls, I like them vegetarian-friendly or with chicken. However, these salmon spring rolls are phenomenal. I love their fresh, minty taste and how every ingredient, from the vermicelli to the cilantro, complements the flavor of the salmon. I substitute baby bok choy for the lettuce, but I leave everything else the same. There’s also a delightful crunchiness from the carrots, bok choy, and cilantro that I just love. My only complaint with these is that I always seem to overfill them. The poor rice paper barely holds together around the massive amount of filling I stuff in there.
6. Salmon Salad Sandwich
This salmon salad is smoother and creamier than the chunky version I mentioned earlier. It’s more like a chicken salad or tuna salad equivalent. It takes 10 minutes to whip up, and all you need to make it is canned salmon, mayo, green onions, celery, dill, salt, and lemon juice. I use thick, dark bread for my sandwiches, and I always add a slice of tomato and some spinach. Sometimes I add a piece of Vidalia onion and some carrot matchsticks, too.
7. Kale Salmon Caesar Salad
You can have this six-ingredient pasta salad ready in 25 minutes. It’s creamy and delicious, but the overall flavor is somewhat milder than I usually like. To offset that, I usually add a pinch of garlic and some diced scallions. Sometimes I add sesame seeds, as well, for their crunch. Honestly, it tastes fine as-is, but I like dishes with lots of flavor, so I tweak this recipe a bit. You may want to try the recipe as written before making changes, though. Some people get more than enough flavor from the Caesar dressing.
8. Salmon Souffle
This souffle takes a little over an hour to make, but if you’re looking for a way to impress everyone with your culinary skills, this is the way to do it. It’s light, fluffy, and airy, and it has a spectacular herby taste, thanks to the nutmeg, chives, parsley, and pepper. It’s a little high in calories, but with only 15 carbs per serving, the carb count is pretty reasonable for a complete meal.
9. Salmon Wraps
This recipe provides you with three different ways to make salmon wraps, and each one is quick, easy, and ideal for lunch on days when you don’t have a lot of time. Whether you go with the “everything bagel,” “sushi,” or a “Caesar salad” salmon wrap, it shouldn’t take you longer than 10 minutes to pull it together. The result will undoubtedly be appetizing.
10. Salmon Chowder
Salmon chowder is thick, warm, and delicious. With ingredients like potatoes, bacon, onions, corn, and half-and-half cream, it’s also incredibly filling, making it perfect for those long, cold fall and winter nights. It’s easy to make and uses everyday kitchen staples, so you probably have almost everything you need for it in your kitchen right now.
